Bacon milk rolls with homemade brown sauce

Ingredients
- 4 milk rolls (or other soft white rolls)
- 8 rashers back bacon, grilled or fried
For the brown sauce
- 3 tomatoes, blanched, peeled and chopped
- 50g brown sugar
- 1 shallot, finely chopped
- 1 tbsp malt vinegar
- 1 tsp allspice
- 1 tsp Worcestershire sauce
- drop of Tabasco
Method
- STEP 1
To make the brown sauce, add all the ingredients to a medium saucepan with a teaspoon of salt, bring to the boil then simmer on a low heat for 30 mins, stirring occasionally to prevent it from sticking.
- STEP 2
Generously butter your milk rolls, add 2 rashers of bacon and a dollop of your homemade brown sauce to each butty.
